Equipment

  • oven safe casserole dish

Ingredients

  • 1 1/4 lb chicken breast
  • 7 oz bacon
  • 1 banana
  • 3/4 c whipping cream
  • 1/2 c chili sauce (or sweet chili sauce)
  • 1/2 c salted peanuts

Instructions

  • Preheat oven to 435°F (225°C).
  • Cut the chicken into strips and brown them in olive oil in a frying pan. You can also use grilled chicken. Lay them at the bottom of your casserole dish.
  • Fry the bacon and add it to the casserole on top of the chicken.
  • Slice the banana into about four long strips.
  • Whip the cream and gently fold in the chili sauce. Pour the mixture over the top of the casserole. Sprinkle with peanuts.
  • Bake in the middle of the oven for about 20 minutes.
  • Serve over rice.
