Ingredients

Cinnamon Apple Cake

  • 1/2 cup butter (softened)
  • 1/3 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 1 and 1/4 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 and 1/2 cups chopped and peeled apples (about 2 medium apples)

Instructions

Apple Cinnamon Cake

  • Preheat oven to 350°F (175°C). Line the bottom of your springform with baking paper and grease the sides.
  • In large bowl, beat the softened butter and sugars with electric mixer on medium speed until light and fluffy. Then beat in the eggs, one at a time.
  • Stir in the vanilla, flour, baking soda, cinnamon and salt until smooth. Stir in the apples. Spoon the cake batter into your springform.
  • Bake for about 40 minutes, or until toothpick inserted in center of cake comes out clean (start checking around 35 minutes). Let the cake cool before frosting.

Brown Cheese Frosting

  • Cut the brown cheese into small pieces. Melt the butter and mix it together with the brown cheese in a small bowl. The heat from the butter should be enough to melt the cheese. If the brown cheese separates or doesn't fully melt you can make it smooth with an electric mixer.
  • In a large mixing bowl, use an electric mixer to beat the cream cheese, powdered sugar, and brown cheese mixture until smooth.
  • Once the cake has cooled, add the brown cheese frosting to the top and sides of the cake.
