These Norwegian American fusion cookies are made with melted Norwegian brown cheese and Reese's Pieces peanut butter candies (or chopped white chocolate, if you prefer).
Preheat oven to 375°F (190°C) and line a baking sheet with baking paper.
Measure out the butter and let it soften to room temperature.
Slice or chop the brown cheese and add it to a saucepan along with 2- 3 tbsp of the measured butter. Melt the brown cheese on medium heat, stirring constantly until you get a nice creamy texture. Remove from heat.
Combine the dry ingredients in a small bowl.
Cream the butter and sugars together in another large mixing bowl. Stir in the melted brown cheese mixture. Beat in the eggs until smooth and add the vanilla. Gradually beat in the flour mixture.
Optional: chop up a few slices of brown cheese into tiny pieces and add to the cookie dough.
Stir the brown cheese and Reese's pieces (or chopped white chocolate) into the cookie dough.
Drop the cookie dough by rounded tablespoons onto the baking sheets.
Bake for about 8 minutes, until the edges just start to look golden brown. Cool on a wire rack.
