Preheat oven to 375°F (190°C) and line a baking sheet with baking paper.
Combine the dry ingredients in a small bowl.
Cream the butter and sugars together in another large mixing bowl. Beat in the eggs until smooth and add the vanilla. Gradually beat in the flour mixture.
Cut the brown cheese into small cubes about the size of the white chocolate chips (or white chocolate pieces). Stir the brown cheese and white chocolate into the cookie dough.
Drop the cookie dough by rounded tablespoons onto the baking sheets.
Bake for about 8 - 9 minutes, until the edges just start to look golden brown.
