Norwegian Cardamom Cookies

Ingredients

  • 9 tbsp butter (room temperature)
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 2 tsp vanilla sugar (or extract)
  • 2 tbsp water
  • 1 and 1/4 cup all purpose flour
  • 2 tsp ground cardamom

Decoration

  • 2 tbsp granulated sugar
  • 1 tbsp ground cardamom

Instructions

  • Cream the butter, powdered sugar, granulated sugar, vanilla, and water in a mixing bowl. Add the cardamom and flour and mix until the dough comes together in a ball - you can use your hands for this.
  • Roll the dough into a sausage and wrap in plastic wrap. Refrigerate for about 30 minutes.
  • Preheat oven to 200°C (390°F). Roll the sausage of dough in the sugar and cardamom. Slice into about 15 slices and lay on a baking sheet lined with baking paper.
  • Bake for about 15 minutes, until the edges of the cookies turn golden.
